Breakfast Egg & Veggie Stir Fry

Ingredients:

1/3 cup chopped onions

1/3 chopped green peppers

1 cup chopped red, orange, and yellow peppers

1 cup chopped kale

5 eggs (beat in a bowl)

1 tsp. avocado oil

Salt & Pepper 

1 cup cooked quinoa 

Directions:

Place stove on  med-high heat with avocado oil in a pan. Pour in eggs and cook all the way through. Drop in all chopped veggies and cook for 5 more minutes. As you stir ingredients chop up the eggs with the spatula so they become scrabbled. Salt & pepper to taste. 

Serve over cooked quinoa.
