1 lb. frozen broccoli
1 onion chopped
2 medium sized portobello mushroom heads chopped
1-2 teaspoons "We Island" Seafood Seasoning (or any kind of your choice)
2 cups cooked quinoa (1 cup uncooked)
In a large pan add 1-2 tablespoons of olive oil along with frozen broccoli and place on med-high heat. Cook for about 5 minutes or until broccoli starts to defrost.
Add in onions, mushrooms, salt, pepper, and seafood seasoning and cook until broccoli has fully defrosted but firm (should be bright green).
Once complete, pour veggies over quinoa.
Salt and pepper to your liking.
