Baked Sweet Potato & Almond Butter

Ingredients:

1 large Sweet Potato

4 scoops almond butter

cinnamon

sea salt

2 tsp. coconut oil

 

Directions:

 

Pre-heat oven to 400 degrees

 

Oil your pan with coconut oil

 

Cut large sweet potato in half and place the cut side down on the pan. Puncture the sweet potato throughout with a fork.

 

Place pan in oven and cook for about 20 minutes or until sweet potato is soft all the way threw.

 

Once sweet potato is done take out of the oven and let cool for about 2 minutes. Cut each slice in the middle and add in 1 tsp. of coconut oil, 2 scoops of almond butter, salt & cinnamon to taste.
